Ahhh Grasshopper....have heard same words from many who have travelled the similar path. Here are a couple of pebbles for you to chew on.
The Wing Spars and Center spar are matched, the both come with the wings on the slow build, if you go QB wings/fuse the center is sent off to Bonanza (P.I) for mating to the QB fuse.
The best laid plans......I refer to Russ Daves and Scott Schmidt...I know Russ, never met Scott but both made serious commitments to complete for OSH this year...Russ flew off his 40 during the week of OSH. Last post on Scott's site had him just finishing up a BEAUTIFUL RV-10. The paint/panel/engine, everything looks great. Neither made their goal but not for a lack of planning or effort...sometimes it just don't work out.
At this early stage, I would place your order for what you want to do...QB? standard? what do YOU want then let the chips fall and build it when you can, you will take more time going slow build especially the wings, the fuselage was fun to build, wings kinda boring. But don't let a schedule bit ya in the kester.
FWIW I didn't see a a whole lot of specials at Airventure 2006 as in past years. So waiting for that may just hold you back longer. Best purchase advice? Get your engine before the first of the year and avoid the price hike. Pay for your kits before the new year hike as well. That will save you 4 or 5k all by itself.
Of course I know of a grwat master who will input some additional whirlwind or turbulant words of advice.

Van's will let you delay the order, but it would be best to tell them
upon order, delivery before Jan 7 or after March. Van's is very good at
hitting their promise date. The only time there are issues is when the
kits are first introduced. Then there are typically delays.

If you delay you may lose the locked-in price. This is what I was told in
early '06

I figured that I'd be done with the empennage by March of this year, so ordered the wings (SB) before the price hike in December and had them ready to go. It's now September and I'm not done with the Tailcone. Stuff gets in the way. Make your best guess, then pick up the phone. Chances are you'll be off a month or two, but who's counting.
BTW. I'm doing slow build wings and (probably) fast build fuselage. I know that the fuselage is "more fun" but figured I needed to save $$$ on one part and time on another. Wings may be boring, but might be "easier."

Not YET, but traditionally there is a price increase announced in
December and starts January 1. In the past if an order is placed and
the deposit the price at the time of deposit is what you pay. However,
that may not have been the case last year, you had to pay in full to
guarantee the price. You should check with Vans prior to placing your
order.
