Rick,
Have you seen the past photos from other members with the hole cut
in the rear face of the vertical part of the stick so the wires
can be stuffed and run down the tube itself? I have photos in
my stuff if you can't find them.
As far as length, I think most people will want to cut them
(if you add different grips) to about the minimum length, but
at that height, they're not all that high above your thighs
when you fly...so I wouldn't worry too much for them being
too high after you cut them. If you don't cut them enough
though, you'll definitely have them hitting the panel edge,
so don't put any critical switches on the panel directly in front
of the stick!
