I am using hydraulic disc brakes with heel pedals. When released, caliper pushes the pedal back. I just had to make a stop for the pedal not to come back excessively.

I used West 105/206 epoxy to coat most of the wood parts, no varnish, urethane, boat or otherwise. Helps pre-coating the insides of the parts before glueing them on. You don't need to mask.
